Watermelon, Feta and Mint Salad

I know, I know…..it’s been done.  I’m not trying to re-invent the wheel here, only to document a GREAT salad.  The combination of sweet watermelon, salty feta and refreshing mint make this the perfect summer salad. Be creative!! I decided to show two ways to serve this seasonal dish. First, as a single serving side salad and second, family style.

Watermelon, Feta and Mint Salad 

Cut the flesh of a  “mini watermelon”  into rounds.  Place watermelon on a plate and top with crumbled feta cheese. Mix approximately 1/3 cup equal parts of chopped arugula and thinly sliced mint leaves and place on top of cheese. Drizzle 1/2 teaspoon of diced red onion and a dash of kosher salt.  Squeeze the juice of 1 lime (between four plates) and drizzle with extra virgin olive oil.  Sprinkle with chopped salted pistachios.

Family Style

Slice the flesh from the melon and cut into bite size pieces. On a platter, arrange watermelon on a bed of arugula (tossed with olive oil and juice of one lime).  Sprinkle red onion,chopped mint, feta, salt and pepper. Squeeze the juice of one lime and drizzle with olive oil,  salt and pistachios.
