S’MORE THE MERRIER

Who knew that today,  August 10th is National S’mores Day???  I didn’t. I’ve always associated that sticky classic with Fall, bonfires and crisp cool air. Well…. last winter I hosted a “Comfort Food” evening with a few college friends and was looking for the perfect dessert. When Randy suggested roasting marshmallows in our living room fireplace I knew I had to come up with a quick alternative. So here is an idea for enjoying s’mores in the cool comfort of your bug free living room. An idea that requires NO fire at all!

Mini  S’mores

1 stick butter, melted

9 graham crackers

pinch of salt

1/8 cup sugar

3.5 ounces of chocolate  (chili chocolate, orange chocolate, dark chocolate…….be creative)

mini marshmallows

Preheat oven to 350 degrees. Combine butter, crackers, salt and sugar in a mixer and blend until it resembles the texture of sand. Spread the graham cracker crust onto a baking sheet. Press down until even. Place in oven for 12 to 15 minutes. Let stand for 10 minutes and begin to cut the crust into circles. Do not let the mixture harden to the point you can’t form the rounds. Find a small object to cut out circles. I used a shot glass. Melt the chocolate over a double-boiler and use a spoon to drizzle a small amount of chocolate and flatten with the back of the spoon. Place the baking sheet in the refrigerator until set. You will be ready to make s’mores within 30 minutes. (You can make this well in advance to this point). Place mini marshmallows on top of the chocolate and place the tray under the broiler until the marshmallows are golden.
