I can’t tell you how many times I’ve said …..I never get a good peach!! So last week I spent some time at the farmers market with a peach farmer from Michigan. I now know more than I’ve ever wanted to know about peaches!!! (Sadly, 80% of his stone fruit crop was destroyed by the spring thaw and freeze.) You need to buy fresh and eat within approximately 2 days. So now…. what to do with the harvest I bought. Lots of dessert options but I love the idea of fruit in a salad. Grilling peaches really brings out their sweetness. You can add any micro-green or soft cheese to this salad…..but newbies may want to start with this!!!
Grilled Peaches with Blue Cheese
2 medium peaches
2 tablespoons olive oil
1/4 cup blue cheese
2 tablespoon pistachios, chopped
2 basil leaves, chopped
watercress, or other micro-green
2 tablespoons balsamic glaze
honey
Heat grill. Drizzle both sides of peaches with olive oil. Grill flat side of peach for about 4 to 5 minutes until grill marks appear. Turn peach over and heat for 1 to 2 minutes. Place peaches on serving platter and sprinkle blue cheese, basil, nuts and greens. Drizzle each half with balsamic glaze and honey.
