Easy, healthy, crunchy, and addicting. Roasted chickpeas (garbanzo beans) are perfect for a quick snack that will probably not require a trip to the store. With only 4 ingredients you can be snacking in about 40 minutes. Season to your liking…I just happened to use cajun spices. These crunchy nuggets pair well with a cold beer.
Roasted Chickpeas
1 15 ounce can of garbanzo beans
1 tablespoon olive oil
Salt
Spice blend (I used 1/4 teaspoon cayenne, 1/4 teaspoon paprika, 1/4 teaspoon garlic powder, 1/4 teaspoon pepper, pinch of oregano, thyme, coriander, and cumin.)
Preheat oven to 400 degrees. Drain beans and rinse. Lay the beans on a baking sheet lined with paper towels. Pat dry. The beans have a thin skin and if you rub them with a paper towel they will shed. I removed most of the skin. Drizzle the beans with olive oil. Bake for 35 to 45 minutes until the beans are golden and crunchy. Season with salt and then your choice of spices.
