It only takes a few minutes for this spicy, herby and creamy sauce to come together in a food processor. This condiment/dipping sauce can be used in a variety of ways. I chose to spread it on a seedy bread, topped with arugula and a slice of summer tomato then finished with salt, pepper and a sprinkle of chopped cilantro.
Herb Mayo
Makes 2/3 Cup
1 jalapeño, halved (more if you want it spicy)
1 bunch cilantro, stems removed
2 cloves garlic
½ cup mayonnaise
Juice of 1 lime, start with one and add more juice if you need the sauce is too thick
Salt and pepper, to taste
Combine all ingredients in a food processor, and blend until smooth.
Store in refrigerator for up to one week.
