Mint and Pea Risotto

Hope Springs Eternal. Hoping for the best, even in the face of adversity. Let’s think positive. Spring. Easter. Family dinners. For Easter this year I’m planning on serving grilled lamb chops and this mint and pea risotto. This creamy arborio rice is brightened up with petite peas and plenty of fresh mint. Not only is this dish delicious, peas pack a nutritional punch. Green peas are one of the most nutritious leguminous vegetables, rich in health promoting phytonutrients, minerals, vitamins and antioxidants. And mint… is a great source of Vitamin C, A and E as well as beta carotene. Chewing leaves of mint freshen breath and offers micro nutrients such as calcium, potassium, magnesium, iron, dietary fiber and manganese.
