Pear and Gorgonzola Salad with Pomegranate Arils and Pecans

This festive holiday salad will let you celebrate all the flavors! Walnuts, pomegranate, pear, gorgonzola and mixed greens, all drizzled with an easy maple dijon vinaigrette!

Pear and Gorgonzola Salad with Pomegranate Airls and Walnuts

  • 2 cups mixed greens
  • 1/4 cup pomegranate arils
  • 1/4 cup halved pecans or walnuts
  • 2 tablespoons gorgonzola
  • 1 pear, thinly sliced

Maple Dijon Vinaigrette

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 and 1/2 teaspoon dijon mustard
  • salt & pepper to taste
  1. Add the greens to a medium size bowl or plate.
  2. Top with pomegranate arils, halved pecans or walnuts, gorgonzola cheese and sliced pear.
  3. Add all the ingredients for the maple dijon vinaigrette to a small mason jar. Shake to mix. Pour over the salad. The dressing recipe makes enough for two salads.
