Buffalo Chicken Bites with Blue Cheese Dressing

A game day favorite. This healthy-ish version of wings hits all the classic flavors minus the deep frying and bones. Simply cook the cubed chicken breast pieces in a little olive oil, then add in Franks Red Hot Sauce, butter and spices til fully coated. Serve with the usual suspects…celery and blue cheese dressing.

Buffalo Chicken Bites with Blue Cheese Dressing

  • 2 tbsp Olive oil
  • 6 Chicken breast (about 4 lbs), cut into 2” pieces
  • 2 tsp Salt
  • ½ tsp Pepper, optional
  • 4 tbsp Butter, or ghee
  • 1 cup Franks red hot sauce
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • Celery
  1. Heat the olive oil in a large skillet over medium-high heat. When the olive oil is shimmering, add the chicken to the pan and sauté until the chicken is cooked through. Work in batches, if necessary, so as not to overcrowd the pan. If you want to speed this process up, use two pans at once.
  2. Once all of the chicken is cooked through, put it all back in the pan over low heat. Add the butter, Frank’s RedHot sauce, onion powder and garlic powder. Stir until each piece of chicken is coated in the Buffalo chicken sauce. 
  3. Serve with celery sticks and blue cheese dressing for dipping.

Blue Cheese Dressing

  • 3/4 cup Mayonnaise
  • 1/4 cup Sour cream
  • 1 tsp Worcestershire sauce
  • 2 tbsp Lemon juice
  • 1 tbsp White vinegar
  • 2 tbsp Fresh chives, finely chopped
  • 1 tbsp Heavy cream
  • 4 oz Blue cheese, crumbled

1. Blend all ingredients in a bowl. The flavor will develop the longer it sits. 

*Keeps for up to 2 weeks refrigerated in an airtight container.
