Everything you love about lasagna, but made in a skillet…noodles, ricotta cheese, sausage, sauce, and melted cheese. One of Randy’s very favorite meals is lasagna, but unless you are making the lasagna ahead of time, it’s not really a weeknight kind of meal. Making a traditional lasagna takes lots of prep and cook time, so it’s almost always reserved for the weekend. This easy skillet lasagna is perfect for busy weeknights, all done in one pot and ready in just 30 minutes. Pair with a side salad and garlic bread.
Weeknight Skillet Lasagna
Serves 4-6
1 lb meat mix (ground beef and bulk Italian sausage) I used all sausage.
1 small onion, chopped
2 garlic cloves, minced
1⁄4 teaspoon red pepper flakes
salt & fresh ground pepper, to taste
6 ounces lasagna noodles, broken into pieces. (8 noodles)
26 ounces marinara sauce (I like Raos)
2 cups water
1⁄2 cup mozzarella cheese, shredded
1⁄4 cup parmesan cheese, grated
3⁄4 cup ricotta cheese
1⁄4 cup fresh basil, chopped
Cook meat in a large nonstick skillet over medium-high heat, breaking it into pieces with a wooden spoon, for about 5 minutes (until cooked through).
Drain meat and return to skillet.
Stir in onion, garlic, red pepper flakes and 1/2 t. salt and cook over medium-high heat until fragrant, about 30 seconds.
Sprinkle broken lasagna noodles into the skillet, then pour in marinara sauce and water over the top.
Cover and cook, stirring often and adjusting heat as necessary to maintain a simmer, until noodles are tender (about 20 minutes).
Take the skillet off the heat and stir in half of the mozzarella and half of the parmesan. Season with salt and pepper.
Dot heaping tablespoons of ricotta over the noodles, then sprinkle with remaining mozzarella and parmesan.
Cover and keep heat very low until the cheeses melt (about 3-5 minutes).
Garnish with basil before serving.

A great choice to cook with Ruby! She can crack all the pasta noodles. Fun and delicious.
She is pretty good at chopping too. Jason got her those Tovla knives for kids for her birthday and they are amazing.

It turned out great!!! I am amazed how much Ruby did herself!! I told Kristine she should make it for Goldie! Miles and Michael enjoyed the leftovers.
