Quiche Lorraine

Quiche may sound fancy, but don’t be intimidated. This savory pie is simple to throw together, and you can use a prepared frozen pie crust to save time.

The filling for a traditional quiche is milk or cream (or both), cheese, and eggs. Quiche can be filled with vegetables, chopped cooked meat, and various fresh herbs. You pre-bake the crust, arrange the cheese plus any meat, vegetables, and herbs on top of the crust, and then fill with the beaten milk, cream, and eggs. It’s that simple

The mother of all quiches, Quiche Lorraine, named after the Lorraine region of France, is one of the most iconic French quiches. Richly flavored with smoky bacon (I used ham), nutty Gruyère cheese and shallots, it’s ideal for brunch, lunch or dinner, especially paired with a green salad and crisp white wine.

Quiche Lorraine

Serves 6-8

1 Tbsp butter

1 medium shallot, chopped

1 tsp brown sugar

2 garlic cloves, minced

6 large eggs, room temp

3/4 cup heavy cream, room temp

1 cup shredded cheese, Gruyere or sharp cheddar

1 cup cooked crumbled bacon or diced ham

1 tsp sea salt

1/2 tsp fresh ground pepper

1/4 tsp ground nutmeg

Store bought or homemade pie crust

Prepare your pie crust by rolling it out to 1/4-inch thickness and forming it in a pie plate or tart pan, chill in the fridge until ready to fill. 

Preheat your oven to 375º F.

Melt the butter in a small skillet over medium heat. When the butter begins to foam, add the onions and brown sugar. Let them cook, stirring occasionally, until they are very tender, about 8-10 minutes. This is a good time to cook your bacon (in a separate skillet) if you are using bacon instead of ham. Add the garlic to the pan with the onions and cook 1 minute longer, until fragrant. Remove the skillet from the heat.

In a large bowl, whisk the eggs, cream, salt, pepper and nutmeg together until they’re well combined. Stir in the cheese, bacon or ham, and the onion mixture. Pour the egg mixture into the prepared pie crust. 

Bake for 35-45 minutes until the egg mixture is set and no longer jiggly in the center. Cut into 8 wedges.
