Caprese Chicken Burger

Juicy chicken burgers gone Caprese style! Pesto, tomatoes, fresh basil and fresh mozzarella offer the best of summer!! A flavorful and delicious way to lighten up your 4th of July menu.

Caprese Chicken Burger

Serves 4

1 lb. ground chicken

1/2 cup Italian bread crumbs

1/4 cup freshly chopped parsley

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

Salt and Peper

1/2 cup Pesto, homemade or store bought

4 slices of fresh mozzerella

4 slices of tomato

Lettuce

4 brioche buns, toasted 

Basil, freshly sliced, for serving

  1. In a medium bowl, stir together chicken, bread crumbs, garlic, parsley, and Parmesan and season with salt and pepper. Form into 4 patties.
  2. Grill over medium-high heat. Cook patties until bottoms are golden, 4 to 5 minutes, then flip cook an additional 4 minutes (with 3 minutes remaining, add mozzarella).
  3. Build your burger; spread pesto, add lettuce, burger, tomato (salt and pepper) and basil.
