Fast forward 6 months. I KNOW. But in January you will thank me when the only available tomatoes are imported from “somewhere” and tasteless. So before the end of the season, gather those farm stand tomatoes and oven bake these jewels of summer with onions, garlic, olive oil and oregano. Simply chop everything into chunks, toss it in the pan, bake and then blend. Then portion the sauce into quart freezer bags. Use this as a base for your favorite comfort foods.
OVEN ROASTED TOMATO SAUCE
2 lbs of tomatoes, quartered
1 medium onion, roughly chopped
8 cloves of garlic
3 Tbl olive oil
2 Tbl fresh oregano
1 tsp kosher salt
Pre-heat oven to 375 degrees.
Combine all the above in a 13 x 9 glass baking dish. Bake for 1 hour. Allow to cool slightly. Transfer to a blender and blend thoroughly.
