Baked Chicken Taquitos

These baked taquitos are a great, easy-to-make Game Day appetizer! The taquitos are stuffed with a mixture of shredded chicken, cheese, salsa and spices. We like to serve them with sour cream, avocado, salsa, cilantro, tomatoes, and cheese! Double up and freeze for a later date.

Baked Chicken Taquitos
Makes 10-12
1/3 cup cream cheese
1/4 cup salsa
2 teaspoons fresh lime juice
2 cups shredded chicken, we use rotisserie chicken
1/2 teaspoon ground cumin
1/2 teaspoon ground chili powder
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 cup shredded cheddar or Mexican blend cheese
10-12 corn tortillas
Toppings
Guacamole/ avocado
Diced Tomatoes
Sour Cream (for a creamy topping, combine salsa and sour cream)
Chopped Green Onion
Salsa
Cilantro
 
Preheat the oven to 425 degrees
Spray a large baking sheet with nonstick cooking spray and set aside.
Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add salsa, lime juice, cumin, chili powder, salt, garlic  powder and paprika. Stir to combine. Add chicken and cheese and combine well.
 Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing.
Place 2-3 heaping tablespoons of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges. Roll them tight.
Place the tacquito, seam side down on the prepared baking sheet. Continue rolling taquitos until the tortillas and filling are gone. You should have about 10-12 taquitos.
Spray the taquitos generously with nonstick cooking spray. Bake for 15-20 minutes or until taquitos are golden brown and crispy. Remove from the oven and serve warm with desired toppings.
Freezer Instructions:
Before baking, flash freeze taquitos in a single layer on a baking sheet or baking dish. Then place taquitos in a labeled freezer bag and store in your freezer for up to 3 months.
To bake frozen taquitos (no need to thaw first): Preheat oven to 375 degrees F and bake for 16-20 minutes, until lightly golden and heated through.
