Crispy Roasted Parmesan Potatoes
Serves 4-5
1 1/2 lbs baby yukon potatoes
2 tablespoons olive oil
PARMESAN MIXTURE:
1/2 cup grated Parmesan
1/2 tsp garlic powder, optional
1/s tsp dried oregano or thyme, optional
salt and pepper
DIPPING SAUCE (OPTIONAL)
3/4 cup sour cream or sub with plain yogurt, or a combination of both
Salt and pepper
Chives, finely diced and more for garnish
Preheat oven to 400 degrees.
Mix Parmesan mixture in a bowl.
Drizzle oil in a 9 x 13″ glass baking dish.
Use a spoon to scatter the Parmesan mixture over the base.
Place potatoes cut side down, pressing firmly.
Spray with oil and sprinkle with salt.
Bake potatoes for 25-40 minutes or until they are soft and the Parmesan crust is deep golden.
Rest for 5 minutes and then cut between potatoes (every few) then flip them upside down so the cheese side is up on the platter and serve with dipping sauce. Adapted from: RecipeTinEats
