The sourdough bread baking craze is having another moment, as are mushrooms with all their incredible health benefits. Mushrooms are packed full of nutrients…rich, low-calorie source of fiber, protein, and antioxidants…(https://www.mayoclinichealthsystem.org/hometown-health/speaking-of-health/mushrooms-make-healthy-meal-magic). This Mushroom Toast ( in France known as Tartine) recipe combines both sourdough and mushrooms. A more traditional ingredient is creme fraiche; I’ve substituted creamy brie. Only 30 minutes and you will serve a simple and comforting meal. Serve with a side salad, soup or a poached egg. Another option: Toasted buttery bread topped with mushrooms then Burrata cheese and balsamic glaze.
Mushroom Toast
- 2–3 tablespoon olive oil or 1/2 butter
- 12–16 ounces mushrooms (oyster, cremini, button, chanterelles, morels, shiitake, porcini, etc.), sliced.
- Salt and pepper, to taste
- 2 garlic cloves- sliced
- 1 shallot – chopped
- 2 tablespoons fresh thyme (or sage or rosemary)
- Splash wine (white, sherry wine, marsala)- about 4 tablespoons, or sub water or broth.
- 2 pieces of toasted sourdough bread.
- Cheese: melty cheese (gruyere, comte, swiss, brie, goat cheese), I used triple cream brie.
- Garnish, chopped parsley ….optional: balsamic glaze or truffle oil
- Preheat oven to 400F (or use a toaster oven)
- Heat oil over medium heat. Add the mushrooms, and salt and pepper and saute, stirring until mushrooms are golden and tender, lowering heat to medium-low.
- Once golden and tender, add more olive oil if needed and sprinkle in the shallots and garlic and thyme, stirring for 1-2 minutes.
- Add the wine (or water) to deglaze the pan, and stir, letting this cook off, then turn the heat off. Taste and adjust the salt and pepper.
- Spread or layer the cheese over two slices of bread, place on the rack in the toaster oven, to toast the bread and melt the cheese.
- Pile the warm mushrooms over the warm, toasty, melty bread.
- Serve with a salad, soup or poached egg.
